Today’s Nom Nom is a really quick and easy recipe that has great flavour, and is great for making leftovers into lunch.
You will need:
½ cup plain, whole-milk yogurt (I recommend getting two big pots so you can cool the sauce down if it’s too spicy)
2 tbsp mayonnaise
1 tsp curry powder (you can make this easily if you don’t have any by combining other ground spices – I used clove powder, cayenne pepper, paprika and cumin.)
2 small green onions (thinly sliced)
¼ tsp salt, plus extra for seasoning
4 cups cooked chicken or other meat
¼ cup raisins
The original recipe called for collard greens to use as a substitute for tortillas – if you have better luck finding them than I did, go for it! If you have better luck finding tortillas than I did, go for it! If not, I recommend trying it with warm naan bread.
This is probably one of my favorite recipes that I’ve learned so far because the sauce is super easy to make and has a nice kick. All you need to do is:
- Make sure you have some kind of cooked meat on hand. Chicken works best, but feel free to use whatever you have around. This recipe is a great way to use up leftovers after a big dinner.
- In a big bowl, mix together the salt, pepper, onion, curry powder, mayonnaise and yogurt. Mix well and add extra curry powder, pepper or salt as needed. If it’s too spicy, add more yogurt.
- Add the raisins and chicken, and stir well.
- Eat it all.
